2020 was definitely one of the most challenging years for many people all over the world. With billions affected by the pandemic, we have all experienced some semblance of hardship. What remains to be true, however, is that despite the obstacles that we have faced, stripping down to what matters the most in our lives is one of the keys to building resilience and appreciation for our life.

Family First, Always

Like many, I have had to spend less time with my family because of quarantine regulations, especially since I live and work in the city. That said, Sundays were always “mommy and me” time, and part of our gatherings were always centered around good food. For me, cooking has always been about sharing, and I have built my passion for cooking on the foundations of expression and creating memorable experiences. I can count with one hand the times I got to spend with my family since the pandemic broke out. But thanks to technology, we have managed to connect in our own way.

Our Sunday Business

Sunday roasts is a tradition found in many cultures expressed in their own way. For me, it is simply a gathering of families, friends, and loved ones around a sumptuous meal. My love language is to perform acts of service—and cooking is one of the highest expression of affection that I share with others. I love creating memories with food and so this is why cooking brunches and Sunday roasts is something I enjoy doing when I host.

Going plant-based meant that I needed to find a way around the ideas of having a roast and the fixings that go well with the main dish. In this rendition of a type of meal where you would normally find meat as the star of the show, I have discovered one of my favorite finds from local importer and specialty shop VegFuzion—Vegan Country Ham! This vegan ham was created by Loving Hut, one of the best vegan restaurant chains in the world. An excellent substitute to your usual meat products that you can season in many ways, it is very easy to prepare for your loved-ones. And if you ever find yourself with some leftovers, it is also a great when thinly sliced and added to your sandwiches, wraps, salads, even stir-frys!

For my Sunday roast spread, I have decided to marinate and glaze the Vegan Country Ham with my special roast glaze. You can also use this on any of your favorite plant-based proteins like tofu, Seitan, tempeh, even roasted or grilled vegetables.

This love month, what better way to show the people you love how much you care about them by creating a special meal that is carefully thought out, lovingly prepared and one that is good for their health.

I’m very passionate about enjoying life through food experiences and adventures. As an ex-omnivore, it is my personal mission to share fun plant-based creations, encourage others to rediscover eating more greens, and eat in a way that nourishes while doing good for the planet.
