Cooking and baking with your kids are fun ways to bond and keep busy at home. Here are some easy and healthy recipes to get you started.

It’s funny how someone like me would now be writing an article about kitchen activities with children because, to be honest, I only developed an interest in cooking and baking these last two years. I was never much interested before.

But wow, have I made up for lost time!

One of the many silver linings of pandemic life is that it awakened in me a love for experimenting in the kitchen with recipes I find online or recipes that are shared with me by family and friends. And it still surprises me (even my closest friends still can’t believe it) how much joy this has sparked, especially when I am able to share the experience with my daughter.

Cooking and baking with my 4-year-old girl have proven to be a wonderful way for us to bond. Plus, it keeps her off the screen, enhances her fine motor skills, teaches her life skills, builds her self-confidence, nurtures her self-esteem, and…well, it’s fun!

It’s also given me an opportunity to begin to introduce to her the concepts of good health, nutrition, and even sustainability, a conversation that is never too early to start—not that all the things we make are healthy. After all, what is a happy and balanced childhood without a dash (or more) of rainbow sprinkles and confectionary sugar?

In this article, I share 3 easy recipes you can do with your little ones—using ingredients you can easily purchase or probably already have in your pantry. I chose these because they have been tried and tested (by my daughter and me!) and because I don’t think that one needs to spend a lot of money to make magic in the kitchen with your children.

Aside from these readily accessible ingredients, all you really need is time, patience, and a whole lot of love to give.

The Best Scottish Shortbread Cookies

Can you believe that this recipe only needs 3 ingredients? It yields around 30 cookies.

Ingredients:

  • 1.5 cups of salted butter (room temperature)
  • 1 cup powdered sugar
  • 3 cups all-purpose flour

Instructions:

  1. In a large mixing bowl, cream together butter and sugar until light and fluffy
  2. Add flour and mix until just combined. The cookie dough should be very soft and crumbly.
  3. Make cutout shapes by kneading the dough a little and then rolling it in between two sheets of wax paper. You can use cookie cutters to cut out shapes and use a spatula to gently pick them up and place them on a cookie tray that’s lined with parchment paper.
  4. Bake at 325°F degrees for 12 to 15 minutes or until edges are firm and slightly golden brown.
  5. Remove cookie tray and allow the cookies to cool down.

*Some Fun and Indulgent Things You Can Add to This Otherwise Very Traditional Scottish Recipe:

  • Mix in ¼ cup of small colorful sprinkles. You can use seasonal or holiday themed sprinkles to fit a theme.
  • Use gel coloring to tint the dough.
  • Once the cookies cool down, spread vanilla frosting on top or drizzle a sugar glaze.
  • Make cookie sandwiches or thumbprints with cherry or raspberry jam filling.
  • Mix in ½ cup of mini chocolate chips or drizzle melted chocolate on top of the baked cookies.

Chocolate Chip Cookie Mix in a Jar (This makes the cutest homemade food gift for teachers, friends and family). Yields 18-20 cookies.

For the Jars:

  • 1 ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ cup rolled oats
  • ½ cup packed brown sugar
  • ½ cup granulated sugar
  • ½ cup chocolate chips
  • 1 quart (32 ounces or 940ml) sized mason jar
  • Cotton balls (optional but very useful)

The Gift Recipient Will Add:

  • ½ cup unsalted butter softened at room temperature
  • 1 large egg
  • A teaspoon vanilla extract

Instructions for the Jars:

  1. Whisk together flour, baking soda, cinnamon, and salt in a large bowl.
  2. Pour the flour mixture into the bottom of a 1-quart jar. Spread evenly with the back of a spoon to form a flat layer, or use a funnel to have extra neat layers.
  3. Add a layer of oats, brown sugar, and granulated sugar, using the same method to pack it down the jar. Lastly, add the chocolate chips and cover with cotton balls up to the top to make sure all the layers stay in place.

Instructions on How to Bake the Cookies:

  1. Mix together softened butter, egg and vanilla until creamy. Add the wet ingredients to the cookie mix and stir until combined.
  2. Shape into 2-inch balls and place on a prepared baking sheet.
  3. Bake at 350°F (180°C) for about 8 minutes, or until just set.

Pink Beet Pancakes (A great way for picky eaters to eat some veggies). Yields 15 small pancakes.

Ingredients:

  • ½ cup flour
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ½ cup plain yogurt
  • ½ medium or 1 small beet (cooked)
  • 1 large egg
  • 2-4 tbsp milk of choice (regular, almond, oat, etc.)
  • Cooking spray or a knob of butter

Instructions:

  1. In a medium bowl, whisk together the flour, baking powder, and cinnamon.
  2. In a blender or food processor, blend together the beet, yogurt and egg for 1 to 2 minutes or until the beet is completely smooth.
  3. Pour the beet mixture into the flour and gently mix until all ingredients are just combined.
  4. Add milk one tablespoon at a time until you have the right pancake consistency. The amount of milk you use will depend on which flour and yogurt you use.
  5. Preheat a medium skillet over medium heat, then spray with cooking spray or add a little butter. Once hot, pour 1 tablespoon of pancake batter onto the skillet a few times. Make sure not to overcrowd the pancakes! Cook for 3 to 4 minutes or until the bottom of the pancakes are golden brown.
  6. Flip the pancakes and let them cook for another 2 to 3 minutes. Repeat with the rest of the batter.
  7. Let the pancakes cool slightly and then serve with your choice of topping or dip.
